Gluten-Free Pancakes

Light, fluffy gluten-free pancakes made with Caputo Gluten Free Flour. Easy, airy, and perfect for home cooks & anyone craving the perfect pancake.

Ingredients

1 ½ Cups Milk of Choice
2 Eggs, separated
2 Teaspoons Vanilla Extract
2 Tablespoons Avocado Oil
3 Tablespoons Sugar
2 Teaspoons Baking Powder
¼ Teaspoon Salt
Butter, to serve
Maple syrup, to serve
Berries, to serve

Instructions

  1. Preheat a large skillet over medium heat.
  2. In a blender, add the milk, 2 egg yolks, vanilla, avocado oil, sugar, Caputo Gluten Free Flour, baking powder, and salt. Blend until smooth.
  3. In a separate bowl, whisk the egg whites until soft peaks form.
  4. In a large bowl, fold the whipped egg whites into the blended pancake batter.
  5. Spoon about ⅓ cup of batter onto the preheated skillet. Cook for about 3–5 minutes per side.
  6. Serve with butter, maple syrup, and berries.

 

Note: Use the batter as soon as it's made. Over time, it will become very thick.
