Chocolate Lava Cake

Caputo Chocolate Lava Cakes – delicate, delicious, and ready in under 30 minutes. No water bath needed for this irresistible dessert!

Ingredients

8 oz Semisweet Chocolate
½ Cups Unsalted Butter, plus extra for greasing ramekins
2 Large Eggs
2 Large Egg Yolks
2 Tablespoons Granulated Sugar
¼ Teaspoon Salt
Powdered Sugar, to garnish

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Butter and dust 4-5 (4 oz) ramekins with Caputo “00” Baking Flour.
  3. In a large metal or glass bowl, combine chocolate and butter. Create a double boiler by placing the bowl over a pot of simmering water. Stir the chocolate and butter in the bowl until melted and combined. Set aside to cool slightly.
  4. In a medium-sized bowl, combine eggs and sugar. Using a hand mixer or whisk, beat for about 5 minutes until light yellow and frothy. Add the chocolate butter mixture, salt, and sift in Caputo “00” Baking Flour. Fold in the flour until combined.
  5. Spoon the batter into 4 or 5 ramekins. Adding more or less batter depending on how thick you would like the lava cakes to be.
  6. Bake for 7-9 minutes or until just set on the edges and the center is still wet.
  7. Using a kitchen towel, take the hot ramekin and flip it out onto a plate while still hot. Sift powdered sugar over the top.
  8. Slice, serve and enjoy!
