Sweet Potato Waffles
A twist on a classic, these nutrient-dense sweet potato waffles are easy to make and will have you wondering why all waffles aren't made this way.

Ingredients
1 ½ Cups Sweet Potatoes, cooked, mashed
¼ Cup Maple Syrup, plus extra for serving
¼ Cup Coconut Sugar
½ Teaspoon Orange Zest
¼ Cup Orange Juice
2 Large Eggs, beaten
1 Tablespoon Vanilla Bean Paste
1 Cup Whole Milk
1 Cup Buttermilk
1 ½ Teaspoons Baking Powder
1 Teaspoon Baking Powder
1 Teaspoon Salt
3 Teaspoons Cinnamon
½ Teaspoon Nutmeg
Butter, to serve
Instructions
- Preheat oven to 350F.
- Place the whole sweet potato in the oven and roast for 45 minutes to 1 hour until soft.
- Remove from the oven, allow it to cool, and peel before mashing.
- Preheat your waffle iron.
- In a large bowl, combine mashed sweet potatoes, maple syrup, coconut sugar, orange zest, orange juice, eggs, vanilla, Olitalia Extra Virgin Olive Oil, milk, and buttermilk.
- In another large bowl, combine Caputo “00” Chefs Flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add the wet ingredients to the dry and mix until combined.
- Brush your waffle iron with Olitalia Extra Virgin Olive Oil and add in about ⅔ cup of batter.
- Continue with the remaining batter.
- Once cooked, serve with extra maple syrup and butter.
