Sweet Potato Waffles

A twist on a classic, these nutrient-dense sweet potato waffles are easy to make and will have you wondering why all waffles aren't made this way.

Ingredients

1 ½ Cups Sweet Potatoes, cooked, mashed
¼ Cup Maple Syrup, plus extra for serving
¼ Cup Coconut Sugar
½ Teaspoon Orange Zest
¼ Cup Orange Juice
2 Large Eggs, beaten
1 Tablespoon Vanilla Bean Paste
1 Cup Whole Milk
1 Cup Buttermilk
1 ½ Teaspoons Baking Powder
1 Teaspoon Baking Powder
1 Teaspoon Salt
3 Teaspoons Cinnamon
½ Teaspoon Nutmeg
Butter, to serve

Instructions

  1. Preheat oven to 350F.
  2. Place the whole sweet potato in the oven and roast for 45 minutes to 1 hour until soft.
  3. Remove from the oven, allow it to cool, and peel before mashing.
  4. Preheat your waffle iron.
  5. In a large bowl, combine mashed sweet potatoes, maple syrup, coconut sugar, orange zest, orange juice, eggs, vanilla, Olitalia Extra Virgin Olive Oil, milk, and buttermilk.
  6. In another large bowl, combine Caputo “00” Chefs Flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Add the wet ingredients to the dry and mix until combined.
  8. Brush your waffle iron with Olitalia Extra Virgin Olive Oil and add in about ⅔ cup of batter.
  9. Continue with the remaining batter.
  10. Once cooked, serve with extra maple syrup and butter.
