- Preheat your oven to 325°F.
- In the bowl of a stand mixer fitted with a paddle attachment, cream softened butter, brown sugar, and granulated sugar together on low speed until smooth and fluffy.
- Add 1 large egg, vanilla extract, and peanut butter, mixing until fully combined and creamy.
- In a separate bowl, whisk together Caputo “00” Baking Flour , baking soda, and salt.
- With the mixer on low, slowly add the dry ingredients to the wet mixture just until the dough forms, being careful not to overmix.
- Chill the dough for 10–15 minutes while you prepare your baking sheet with parchment paper.
- Roll the dough into 1-inch balls (or your preferred size) and evenly place them on the baking sheet.
- Bake for 10–12 minutes, or until the edges are set and the centers still look slightly soft. They will continue to set as they cool down.
- Let them cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Plate, serve, and enjoy!
