Cranberry Thyme Scones

Festive and flavorful, these cranberry thyme scones perfectly blend tart berries and herbs into a buttery treat that will effortlessly impress anyone who tastes them.

Ingredients

⅓ Cup Sugar, plus extra for garnish
2 ¼ Teaspoons Baking Powder
½ Teaspoon Salt
3 Teaspoons Fresh Thyme
½ Teaspoon Lemon Zest
½ Cup Butter, cold, cubed
1 Cup Frozen Cranberries
1 ¼ Cup Buttermilk
1 Tablespoon Heavy Cream

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, add Caputo “00” Baking Flour, sugar, baking powder, salt, thyme, and lemon zest. Mix to combine.
  3. Next, add in cubed butter and toss with flour, mixing with your hands until pea-sized pieces of butter form in the flour mixture. Add buttermilk and mix until almost combined, then add in the cranberries and fully combine.
  4. Turn out dough onto a floured surface and form it into a round disk, about 5 inches, and cut it into 8 wedges.
  5. Spread out the scones on a parchment-lined sheet tray. Then brush the tops with heavy cream and a sprinkle of sugar on each.
  6. Bake for about 25-30 minutes or until golden.
  7. Serve and snack on anytime of day :)

Notes:

  • This dough doesn't require refrigeration!
  • For added convenience, you can prepare in them advance, store in the fridge, and bake fresh for your guests!
