Cranberry Thyme Scones

Ingredients
⅓ Cup Sugar, plus extra for garnish
2 ¼ Teaspoons Baking Powder
½ Teaspoon Salt
3 Teaspoons Fresh Thyme
½ Teaspoon Lemon Zest
½ Cup Butter, cold, cubed
1 Cup Frozen Cranberries
1 ¼ Cup Buttermilk
1 Tablespoon Heavy Cream
Instructions
- Preheat the oven to 400 degrees F.
- In a large bowl, add Caputo “00” Baking Flour, sugar, baking powder, salt, thyme, and lemon zest. Mix to combine.
- Next, add in cubed butter and toss with flour, mixing with your hands until pea-sized pieces of butter form in the flour mixture. Add buttermilk and mix until almost combined, then add in the cranberries and fully combine.
- Turn out dough onto a floured surface and form it into a round disk, about 5 inches, and cut it into 8 wedges.
- Spread out the scones on a parchment-lined sheet tray. Then brush the tops with heavy cream and a sprinkle of sugar on each.
- Bake for about 25-30 minutes or until golden.
