Apple Cake with Brown Butter Glaze

Ingredients

Apple Cake
1 Teaspoon Nutmeg
2 Teaspoons Cinnamon
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
½ Cup Light Brown Sugar
2 Teaspoon Vanilla Extract
½ Cup Greek Yogurt
3 Medium Eggs
¾ Cups Whole Milk
1 ½ Cups Apples, finely chopped
Brown Butter Glaze
¼ Cup Unsalted Butter
¼ Cup Light Brown Sugar
3 Tablespoons Whole Milk
¼ Cup Powdered Sugar

Instructions

Apple Cake:

  1. Preheat the oven to 350°F.
  2. Prepare a 9-inch round baking pan with cooking spray and parchment paper.
  3. In a large bowl, combine Caputo "00" Baking Flour, nutmeg, cinnamon, salt, baking soda, and baking powder.
  4. In a separate bowl, mix the brown sugar, vanilla, Olitalia Extra Virgin Olive Oil, yogurt, eggs, and milk.
  5. Pour the wet ingredients into the dry ingredients. Mix until just combined, then fold in the chopped apples.
  6. Bake for 35 to 40 minutes or until the cake is cooked through.
  7. While the cake is cooling, prepare the glaze.

Brown Butter Glaze:

  1. In a saucepan over medium heat, add the butter and allow it to melt. Continue to cook until the milk solids turn light golden brown.
  2. Once the butter has browned, add the brown sugar and mix until smooth.
  3. Turn off the heat and stir in the milk and powdered sugar. Mix until smooth.
  4. Top the cooled cake with the warm brown butter glaze.
  5. Serve and enjoy!
