  • Yield: 2x 900g dough balls
  • Prep Time: 30 min
  • Cook Time: 12 min

Ingredients

Instructions

Mix the Dough

  1. Add the yeast to the water and mix until dissolved.
  2. Add Caputo "00" Pizzeria Flour and mix until combined, about 5 minutes.
  3. Add the salt and continue mixing. Then add the Olitalia Extra Virgin Olive Oil and mix until fully incorporated.
  4. Continue mixing until the dough is smooth, cohesive, and elastic, about 10 minutes total.

Ball the Dough

  1. Divide the dough into two equal portions, approximately 900g each.
  2. Form each portion into a tight dough ball and place into a baking pan, then cover with plastic wrap.
  3. Let the dough balls rest at room temperature for 4 hours, until the dough has become relaxed, airy, and slightly expanded.

Shape the Pizza

  1. Generously coat your pan with Olitalia Extra Virgin Olive Oil.
  2. Gently place the dough into the pan and use your fingertips to stretch it toward the edges.
  3. Work slowly and gently to preserve the air in the dough.
  4. If the dough resists stretching, let it rest for several minutes before continuing.
  5. Once fully stretched, let the dough rest in the pan until it fills the pan.

Bake

  1. Preheat your home oven to 450°F.
  2. Add your sauce and toppings, then bake for approximately 12 minutes on the bottom shelf, or until the crust is puffed and golden and the bottom is deeply crisp.
  3. Remove from the pan, slice, and serve.

Notes

Pro Tip: For an extra-crispy finish, turn the broiler on high for an extra 2 minutes of baking.
