Healthy Banana Nut Muffins

Brighten your day with these Healthy Banana Nut Muffins. They are easy to make, keep you energized, and are lighter than ever with the addition of Caputo “00” Chef’s Flour.

Ingredients

¼ Cup Milk of Choice
¾ Cups Maple Syrup
2 Large Eggs, beaten
1 ½ Cups Mashed Bananas, about 3 bananas
1 Teaspoon Vanilla
1 Tablespoon Ground Flaxseed
¼ Teaspoon Baking Soda
1 Teaspoon Baking Powder
2 Teaspoons Ground Cinnamon
1 Teaspoon Salt
1 ½ Tablespoons Coconut Sugar, divided, for topping
½ Cup Walnuts, finely chopped, divided, for topping

Instructions

  1. Prepare a 12-cup muffin tin with liners and set aside.  
  2. In a medium-sized bowl, combine Olitalia Extra Virgin Olive Oil, milk, maple syrup, eggs, mashed banana, and vanilla.  
  3. In a large bowl, combine Caputo “00” Chef’s Flour, flaxseed, baking soda, baking powder, cinnamon, and salt.  
  4. Add in the wet mixture to the dry and combine until just mixed. 
  5. Using an ice cream scoop, scoop the batter into the lined muffin pan. Top each muffin with some coconut sugar and chopped walnuts.  
  6. Bake for 20-25 minutes.  
  7. Serve and enjoy!
