Ingredients
Filling
16oz Whole Milk Ricotta
11oz Spinach, blanched and drained
1 Egg Yolk
½ Teaspoon Salt + a pinch for boiling water
½ Teaspoon Pepper
½ Teaspoon Nutmeg
¼ Cup Parmigiano Reggiano, grated
¼ Cup Pecorino Romano, grated
Instructions
Prep
- Prepare your Caputo Beet Pasta Dough and while it rests, prepare your filling.
- Begin by blanching your spinach: Bring a large pot of salted water to a boil and drop in raw spinach. After 1-2 minutes, transfer the spinach to a bowl of ice water. This cooks spinach, enhances the color, and avoids adding extra oils.
- Strain your spinach from the ice bath and wring it out in cheese cloth, a paper towel, or a kitchen towel until it's completely dry. Lay out your strained spinach on a paper towel and place it in the refrigerator for 10 minutes, uncovered. This will draw out any excess moisture.
- While this dries out, add your ricotta, egg yolk, salt, pepper, nutmeg, and grated cheese to a medium bowl.
- Remove your spinach from the refrigerator and roughly chop before adding it to your ricotta mixture. Stir and combine until silky smooth!
- Add your filling to a piping bag or large zip-lock bag and refrigerate while you roll out your ravioli dough.
Filling Ravioli
- Once your Caputo Beet Pasta Dough sheets are rolled out, pipe your spinach and ricotta filling in the shape of a heart, a bit smaller than your heart shape cookie cutter. Be sure to leave enough space to close your dough. For extra tips on rolling out raviolis check out this recipe.
- When your filling is placed, lay the second sheet of dough on top and start to stamp out your raviolis using your heart shaped cookie cutter. You want to make sure no filling comes out the sides! And that the ravioli is fully sealed.
- For an extra fun touch, take a fork and press around the edges of your heart ravioli. This will help seal the ravioli and looks like a stitch; If you prefer a clean edge, you can press with just your fingers.
- Place your ravioli on a tray or counter dusted with Caputo Semola Flour until ready to cook.
Cooking
- In a separate pan, prepare your Ciao Amore Sauce with Spicewalla Amore Seasoning.
- Bring a large pot of salted water to a boil and drop in your ravioli for 1 and ½ minutes. Always test a piece to ensure your raviolis are cooked al dente 😊
- Strain your ravioli, combine with amore sauce, and a finishing touch of Parmigiano Reggiano and fresh basil.
- Plate, serve, and enjoy with your loved ones <3
