Ultra-Crispy Onion Rings
Not greasy, these addictive ultra-crispy onion rings pack the perfect crunch in every bite!

Ingredients
1 large onion, sliced into 1/4” rings, separated
3/4 cup whole milk buttermilk
2 tablespoons apple cider vinegar
Kosher salt and pepper to taste
Instructions
- Slice your onion into 1/4" rings.
- Fill a heavy bottomed saucepan with Olitalia Frienn Frying Oil to measure 2-3”. Heat over medium-high heat until a thermometer registers 350°F.
- While the oil heats, mix buttermilk and vinegar in a shallow bowl. Place the Caputo "00" Chef's Flour in another bowl or baking dish and season with salt and pepper.
- Toss onion rings in flour mixture, shaking off excess, and transfer them to a wire rack. Working in batches, dip the onion rings in the buttermilk mixture, letting excess drip back into bowl; toss again in flour.
- Working in 2 or 3 batches and maintaining the temperature of the oil, fry the onion rings until golden brown and crisp, about 3 minutes per batch.
- Let the onion rings drain on paper towels. Season with salt, and enjoy!
