Ultra-Crispy Onion Rings

Not greasy, these addictive ultra-crispy onion rings pack the perfect crunch in every bite!

Ingredients

1 large onion, sliced into 1/4” rings, separated
3/4 cup whole milk buttermilk
2 tablespoons apple cider vinegar
Kosher salt and pepper to taste

Instructions

  1. Slice your onion into 1/4" rings. 
  2. Fill a heavy bottomed saucepan with Olitalia Frienn Frying Oil to measure 2-3”. Heat over medium-high heat until a thermometer registers 350°F. 
  3. While the oil heats, mix buttermilk and vinegar in a shallow bowl. Place the Caputo "00" Chef's Flour in another bowl or baking dish and season with salt and pepper.
  4. Toss onion rings in flour mixture, shaking off excess, and transfer them to a wire rack. Working in batches, dip the onion rings in the buttermilk mixture, letting excess drip back into bowl; toss again in flour. 
  5. Working in 2 or 3 batches and maintaining the temperature of the oil, fry the onion rings until golden brown and crisp, about 3 minutes per batch.
  6. Let the onion rings drain on paper towels. Season with salt, and enjoy!
